Earthy red lentils and nutty roasted cauliflower both take well to the Indian-spice flavor profile in this filling vegetarian dish. You'll start by cooking the aromatics - garlic, ginger, and garam masala. Then you'll add the red lentils, which easily breaks down, making them great to cook with in a skillet. Finally, you'll roast the cauliflower. The two-stage cooking method for the cauliflower (on a sheet pan first covered with aluminum foil, then uncovered) creates a well-browned exterior and tender center.
